1 fryer chicken
2 cups all purpose flour
1 teaspoon baking powder
2 eggs, beaten
1 teaspoon salt
1/2 teaspoon pepper
canola oil, enough to coat bottom of pan

Directions:
Directions:
Combine flour, baking powder, salt, and pepper. Heat oil in skillet. Pat chicken dry with paper towels. Roll chicken in egg then in dry mixture. Place in large skillet with hot oil. Cook until done, about 5 minutes on each side; chicken will be brown and crispy.
