4 eggs
1 c sugar
1 c sifted cake flour
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
2 T melted butter
2 c whipped cream
confectioners sugar

Directions:
Preheat oven 350º
Sift together dry ingredients. In bowl of electric mixer, beat eggs until light and thick. Gradually add sugar and continue to beat until light and thick. Add dry ingredients. Fold in melted butter and vanilla.
Line a jelly roll pan (sheet pan) with wax paper. Pour in batter. Bake for 20 minutes. While cake is baking, open a dish towel onto counter and cover with confectioners sugar. When cake is baked, unmold onto dishtowel and peel off paper. Cover cake with more confectioners sugar and roll up in towel. When cooled, carefully unroll and fill with jelly, fresh fruit, whipped cream or pie filling. Roll up cake and cover with whipped cream.

We have great memories of Rose baking all of our favorites when the family would be together over the holidays. The warm jelly roll wrapped in the towel on the counter is one of the best.
