1/4 c. maple syrup
3 T. cider vinegar
1 T. olive oil
1 T. Dijon mustard
1/4 tsp. salt
1/4 tsp. black pepper
1 (15.5 oz.) can Great Northern beans, rinsed, drained
1/2 c. thinly sliced green onions
1/2 c. finely chopped red pepper
5 bacon slices, cooked and crumbled
1 (7 oz.) package fresh baby spinach

Combine the first 6 ingredients in a small microwave-safe bowl, stirring mixture with a whisk, and microwave at high 1 minute or until hot. Place beans in a 2 c. glass measuring cup, microwave at high 1 minute or until hot. Combine green onions, bell pepper, bacon, and spinach in a large bowl. Add the syrup mixture and beans, toss well to combine.
