5-pound roast
2 tablespoons flour
1 teaspoon salt
1 teaspoon pepper
6 tablespoons oil
1 bay leaf
1 garlic clove, pressed
6 carrots, pared
6 medium potatoes, pared
1 large onion
1 cup water
1 cup red wine

Directions:
Directions:
Heat oven to 325 degrees. Wipe roast well with damp paper towels. Combine flour, salt, and pepper; rub into surface of meat. Heat hot oil in a Dutch oven and brown roast on both sides.

Add bay leaf, garlic water and wine. Cover and place in oven for two hours.

Add vegetables; Cover and bake one hour longer until done.
