1 c. unsalted butter, softened OR shortening*
1 c. br. sugar, packed
1 c granulated sugar
1-1/2 c. all-purpose flour
1 t. salt
1 t. baking soda
1/2 t. nutmeg, freshly grated
1 t. cinnamon
2 lg. eggs, well beaten
1 T. vanilla
3 c. rolled oats (do not use instant)
1-1/2 c. raisins
1/2 c. chopped walnuts

*shortening will result in chewier cookies

Preheat oven to 350º. Grease two large cookie sheets.
In a large mixing bowl, beat butter until creamy. Add sugars; beat until fluffy, about 3 minutes. Beat in eggs and vanilla.
Mix flour, salt, baking soda, cinnamon and nutmeg together in medium bowl. Stir dry ingredients into the butter-sugar mixture. Stir in raisins and nuts. Stir in oats.
Spoon out dough by lg. tablespoons onto prepared cookie sheets, two inches apart.
Bake until cookie edges turn golden brown, 10-12 minutes. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
