1 can red beets (reserve liquid)
1 qt. buttermilk or sour milk
1 cup sour cream
1 Tbsp. finely chopped onion or 2 Tbsp. green onions
1 Tbsp. finely chopped dillweed
1 medium cucumber, peeled and diced
4-6 hard boiled eggs, diced
boiled potatoes

Grate red beets, put in vinegar and add salt to taste. Set aside.
In 3 qt. bowl, start with sour cream. Add onion and dillweed. Mix until smooth. Add buttermilk and Beat 1/2 minute. Add red beets and liquid, salt and pepper to taste and cucumbers. Mix well.
Let stand 2-6 hours in refrigerator.
Serve with boiled potatoes and chopped eggs.
