Ingredients:

2 cups flour
2 cups sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 eggs
1 tsp. vanilla
1 cup oil
2 cups grated carrots

Cream Cheese Icing:
1 pkg. cream cheese
2 sticks butter
2 cups powdered sugar
1 tsp. vanilla
1 cup chopped walnuts

Directions:
Directions:
Combine flour, sugar, soda, seasonings and oil. Beat in eggs, one at a time. Then add the carrots and vanilla. Pour into 2 greased 9" cake pans. Bake for 30-35 minutes. Let cool 10 minutes. and remove from pan and cool on wire racks.

For the icing:
Cream the cream cheese and butter together. Add the powdered sugar, vanilla and walnuts. Beat until blended. Frost cooled cake.
