Ingredients: 6 boneless, skinless chicken breast, pounded thin 8 slices of white bread, toasted dry in oven 3/4 cup grated Parmesan cheese 1 tsp. chopped fresh or dry parsley salt and pepper to taste 1 1/2 cups shredded Mozzarella Cheese 1/2 cup Ricotta Cheese or none 1/2 cup sour cream 1/2 cup Parmesan cheese 2 tablespoon Butter 3 cloves garlic, minced 1 onion, chopped 1 cup sliced mushrooms, canned or fresh 8 Slices bacon cooked and chopped 2 or more eggs, beaten (You can use just one, two or all cheeses. You can so play with this recipe :-)

Directions:Pulse the toasted bread, Parmesan, parsley, salt and pepper in a food processor. Cook bacon, remove from pan, chop and set aside. Put the butter in the pan and scrape up the bits from bottom of pan. When melted, add the garlic, onions and mushrooms and saute until tender. Mix the mozzarella, Parmesan, ricotta and sour cream together. Add the onions and mushrooms with the bacon grease to the cheese mixture. Then add the bacon and mix all together.Place 2-3 tbsp. of cheese mixture on each chicken breast, roll and secure with toothpicks. Roll meat in egg and then in bread crumb mixture. Place in a greased baking dish and bake at 400 for 30-35 minutes. Serve with stuffing and a salad. So Good! |
