2 cans whole green beans (16 oz.)
1 can hearts of palm, diced or in chunks
1/2 lb. raw mushrooms, sliced
3-4 shallots or green onions, chopped

Dressing: (best if prepared a day ahead)
2 T. tarragon vinegar
1 t. Dijon mustard
1 clove garlic, chopped
1 T. chopped shallots or green onions
6 T. salad oil
salt and pepper to taste

Serves: 8
Preparation Time: 15 min.

Combine and chill green beans, hearts of palm, mushrooms and green shallots.
Dressing: Combine ingredients as listed in a jar with a cover. Chill and shake well before pouring over salad which may either be tossed in a bowl or served on a platter.
