1 lb. (2 c.) black turtle beans
1 c. coarsely chopped yellow onion
1 med. carrot, chopped
1 bay leaf
1 pinch thyme
1 T. Worcestershire sauce
2 1/2 quarts water
3 smoked ham hocks or 1 lb. cooked bacon or sausage
1 c. chicken stock or 2 cubes bouillon
1/4 c. dry sherry
chopped onion for garnish

Serves: 6

Wash beans, put all in pot except salt, pepper and sherry. Simmer at least 3 hours until a bean will crush easily. Remove bay leaf and ham hocks if used. Puree beans in a blender. Return to heat. Add salt, pepper and sherry. If too thin, add rue of equal parts butter and flour. If too thick, add water or chicken stock. Pour into bowls, sprinkle onion and lace with sherry.
