2 lbs. baking potatoes
Few diced onions
2 cloves garlic, minced
2 T. butter
1 (8 oz.) sour cream
5 T. Half-n-Half (or milk)

Directions:
Directions:
Preheat over to 350º. Grease a 2 qt. casserole. Quarter potatoes and cook them covered in boiling salted water until tender, then drain. In a skillet, cook the onions and garlic in butter until tender. Smash the drained potatoes or beat with a mixer until smooth. Add the onion mixture, sour cream, salt, pepper and gradually beat in the cream to make it fluffy. Transfer to the casserole dish. Bake uncovered for 40 minutes or until heated through. Top with mozzarella cheese and bake a few minutes longer.
