1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter, softened
1/2 cup sugar
1 egg
1 cup sour cream
1 tsp rum extract
1 cup drained, crushed pineapple
1/2 cup flaked coconut
Directions:
Directions:
Combine flour, baking powder, soda and salt. Beat butter, sugar, egg, sour cream and rum extract together until well blended. Add liquid ingredients all at once to dry ingredients. Stir until moistened. Stir in pineapple and coconut. Fill greased muffin tins 3/4 full. Bake at 375º for 20-25 minutes.
