1 1/2 cups whole wheat flour
1 1/2 cups All Bran cereal
1/2 cup packed brown sugar
1 Tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup raisins or chopped dates (opt)
1 cup grated carrots
1 3/4 cups buttermilk or soured milk
1/4 cup vegetable oil
1 egg, lightly beaten
grated rind of 1 lemon or orange (opt)

Mix all dry ingredients together. Add raisins and carrots. Add buttermilk, oil, egg and lemon rind, stirring just until combined. Spoon into greased muffin tins. Bake at 400 for 20 minutes or until tops of muffins are firm to touch.
