Package bulk sausage
Onion, chopped
Zucchini, grated
Fresh spinach, chopped
Bread crumbs
Flank Steak
Beef broth
Tomato paste
Red wine
V8 juice
Fresh rosemary
Flour

Directions:
Directions:
Sauté sausage, onion, zucchini and spinach together. Add bread crumbs to make stuffing. Score flank steak and pound out onto board. Press stuffing onto flank steak, roll and tie with string. Brown in skillet on all sides, place in casserole dish and preheat oven to 350°. Make sauce by combining beef broth, tomato paste, some red wine, V8 juice and fresh rosemary, pour over roast and then place in oven at 350°. Cook until tender (1 to 1 ˝ hours), but not dry. Baste with sauce often. Cool for 20 to 30 minutes so that steak sets. Thicken sauce with flour to make gravy. Slice and serve.
