Boneless pork country ribs, diced in large chunks
Onion, diced
Garlic cloves, diced
Vegetable oil
Tomatillos
Green salsa (hot, medium or mild, depending on your taste)
Salt
Pepper
Medium can diced green chilies
Can diced jalapeņos (if you want it hot)

Directions:
Season pork with salt and pepper. Brown pork cubes in oil. In the meantime, husk tomatillos and boil until done (they lighten up and just start to crack), remove from heat, drain and mash with fork. Set aside. When meat is done, add onion and garlic and cook until onion wilted. Add tomatillos, green salsa, and chilies to pan and cook until pork is very tender. Add more liquid if needed. Takes quite a while to cook. Serve with tortillas, sour cream, and cilantro.
