3 Tbsp butter or margarine, softened
3/4 cup sugar
3 eggs
1 cup applesauce
1 tsp vanilla
4 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup milk

Cream butter and sugar in a bowl. Add the eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine dry ingredients. Add to creamed mixture alternately with milk. (Batter will be thick.) In a deep pan or deep fryer, drop teaspoonfuls of batter, a few at a time, into hot oil. Turn. Fry until golden on both sides. (About 1 minute on each side.) Drain on paper towels, roll in granulated or powdered sugar while warm. Makes 5 dozen.
