1 1/4 cups flour
1 cup corn meal
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup cooking oil
1 cup milk
1 cup cubed ham
1/2 cup chopped red peppers
shredded cheese

Directions:
Directions:
Measure first 3 ingredients into large bowl. Stir together. Make a well in the center. Beat egg in small bowl until frothy. Mix in oil and milk. Pour into well. Stir just enough to moisten. Fold in ham and red peppers. Batter will be lumpy. Fill greased muffin cups 3/4 full. Sprinkle shredded cheddar on top. Bake in 400º over for 20-25 minutes, then remove. Serve warm or wrap and send in lunches.
