2 cups unsweetened pineapple juice
2 1/2 cups sugar
2 cups vinegar
1 1/2 cups water
1 cup packed brown sugar
2/3 cup cornstarch
1/2 cup ketchup
6 Tbsp soy sauce
2 tsp chicken bouillon powder
3/4 tsp ginger
3 Tbsp vegetable oil
1 can (8oz) pineapple chunks, drained
1 medium pepper, julienned
3-3 1/2 cups chicken (12 chicken breasts or 2 broiler chickens cut up)

Directions:
Directions:
In a saucepan combine all ingredients except chicken, pineapple and peppers. Stir until smooth. Bring to a boil. Cook and stir for 2 minutes until thickened. Set aside. Brown chicken on all sides in oil in skillet. Place chicken in 2 greased baking dishes. Pour reserved sauce over chicken. Bake uncovered at 350º for 45 minutes. Add pineapple and green pepper. Bake 15 minutes longer or until heated through. Makes 12 servings.
