1 lb ground beef
1/4 cup chopped onion
1 clove garlic, minced
1/4 cup celery, chopped
1/4 cup peppers, chopped
1/2 tsp salt
1/4 tsp pepper
4 cups shredded mozzarella cheese
1 (750ml) container cottage cheese
2 eggs
1/3 cup Parmesan cheese
1/4 tsp pepper
1 Tbsp parsley flakes
1 jar (796ml) spaghetti sauce
4 cups medium shell pasta or macaroni cooked and drained
frozen chopped spinach, drained and squeezed (opt)
1 can diced tomatoes, with juice

Cook beef and onion until meat is no longer pink and onion is tender. Drain. Sprinkle with salt and pepper. Add spaghetti sauce and set aside or simmer until thickened a little. In a large bowl or pot, combine pasta, 3 cups mozzarella cheese, cottage cheese (drained), eggs, Parmesan, parsley and pepper and spinach. Stir gently. Pour into a large, greased casserole dish. Top with meat mixture. Cover and bake at 350 for 35-40 minutes. Sprinkle with remaining mozzarella cheese and bake uncovered for 15 more minutes. Let stand 10 minutes before serving. Serves 6-8 hungry people.
