1 lb ground beef
1/4 cup chopped onion
1 clove garlic, minced
1/4 cup celery, chopped
1/4 cup peppers, chopped
1/2 tsp salt
1/4 tsp pepper
4 cups shredded mozzarella cheese
1 (750ml) container cottage cheese
2 eggs
1/3 cup Parmesan cheese
1/4 tsp pepper
1 Tbsp parsley flakes
1 jar (796ml) spaghetti sauce
4 cups medium shell pasta or macaroni cooked and drained
frozen chopped spinach, drained and squeezed (opt)
1 can diced tomatoes, with juice

Directions:
Directions:
Cook beef and onion until meat is no longer pink and onion is tender. Drain. Sprinkle with salt and pepper. Add spaghetti sauce and set aside or simmer until thickened a little. In a large bowl or pot, combine pasta, 3 cups mozzarella cheese, cottage cheese (drained), eggs, Parmesan, parsley and pepper and spinach. Stir gently. Pour into a large, greased casserole dish. Top with meat mixture. Cover and bake at 350º for 35-40 minutes. Sprinkle with remaining mozzarella cheese and bake uncovered for 15 more minutes. Let stand 10 minutes before serving. Serves 6-8 hungry people.
