2 T. oil
1 (16 oz.) can diced tomatoes
1 small onion, chopped
1 clove garlic, diced
1/2 tsp. oregano
1 pt. non-fat sour cream
1 lb. lowfat Monterey Jack cheese
2 (7 oz.) cans whole green chiles, (seeded)
12 corn tortillas

Directions:

Leave sour cream out to get to room temperature. Heat oil, add onion and garlic and cook until tender. Add tomatoes and oregano. Simmer uncovered 20 minutes until slightly thickened. Stir sour cream into sauce, but don't boil. Fill tortillas with a small strip of cheese and chile strips and a spoonful of the tomato sauce. Place in a shallow dish. Pour remaining sauce over the top. Bake 20 minutes at 350º.
