2 cans Ortega diced chiles
6 - 8 eggs, separated
1/2 lb. Longhorn cheese
1/2 c. milk
2 T. flour
Salt and pepper to taste
Browned sausage, hamburger or cooked pieces of chicken

Directions:
Directions:
Grease 8" square casserole - layer chiles, then cheese and another layer of chiles. Beat egg whites until very stiff - fold in all other ingredients. Layer meat. Spread egg mixture over chiles. Cover with foil tent. Bake at 350º for 30 - 35 minutes. Uncover and let brown 5 minutes more.
