1 large onion, chopped
3 cloves garlic, pressed
2 (14.5 oz.) cans diced chili-style tomatoes, drained
2 (15.5 oz.) cans golden hominy, drained
1 tsp. chili powder
3/4 tsp. pepper
3 ozs. shredded reduced fat Monterey Jack Cheese

Directions:
Directions:
Cook onion and garlic in a non-stick skillet coated with cooking spray over medium-high heat, stirring constantly, 3 minutes or until tender. Stir in diced tomatoes and chiles and next 3 ingredients. Spoon into a 3-qt. baking dish coated with cooking spray. Bake at 400º for 15 minutes. Sprinkle with cheese and bake an additional 5 minutes.
