2 cups flour
1 cup sugar
1 tsp baking powder
1/4 tsp salt
pinch cinnamon
4 Tbsp cold margarine
3 large eggs, slightly beaten
1 tsp vanilla
1 cup chocolate chips
1 cup walnuts, coarsely chopped (opt)

Directions:
In a large bowl, mix first five ingredients. Cut in margarine until finely crumbled. Spoon 1 Tbsp beaten eggs into a cup. Reserve for brushing on top later. Add vanilla to remaining eggs and add to flour mixture. Stir well until evenly moist, then add chocolate chips and nuts. Knead mixture by hand until dough forms. Divide dough in half. Shape each into a 9x2" log. Place 4" apart on a large cookie sheet. Brush the top and sides with reserved eggs. Bake for 22-25 minutes at 350º. Cool for 10 minutes on a cookie sheet. Place one log on a cutting board. With a serrated knife, cut the warm log crosswise into 1/2" thick diagonal slices. (We let them cool at this point and eat them). Place slices upright, 1/4" apart on the cookie sheet. Repeat with remaining log. Bake slices for 15 minutes to allow biscotti to dry out. They will harden as they cool. Store in a tightly covered container. Makes about a dozen biscotti.
