Light Vegetable Oil cooking spray
6 drumsticks, 3 breasts, skin removed
3 1/2 c. icewater
1 c. plain nonfat yogurt

Breading Ingredients
1c. dried italian bread crumbs
1 c all-purpose flour
1 T. Old Bay seasoning
1/2 tsp. garlic powder
1/2 tsp. creole seasoning
1/8 tsp. black pepper
dash cayenne pepper
1/2 tsp. dried thyme
1/2 tsp. basil
1/2 tsp. oregano

Directions:
Preheat oven to 400º. Coat baking sheet with 3 sprays of oil. Put chicken in large bowl with ice water. Put yogurt in medium bowl. Set aside. toss all breading ingredients in large ziplock bag. Seal and shake well to mix. Take 2 pieces chicken, roll in yogurt, put in bag and shake well to coat. Place on baking sheet and spray lightly with oil. Continue with balance of chicken. Place baking sheet on bottom shelf of oven and bake 1 hour turning every 20 minutes for even browning.
