1 cups posole corn
1 lb pork butt roast
1/4 of dried chili caibe flakes
1 tsp. oregano
1 1/2 tsp. ground sage
salt to taste

Directions:
Directions:
Sort, wash and soak dried posole. Place posole, cubed pork and spices in a heavy 6 - 8 quart pot with a lid. In a blender puree chile flakes with 1 cups of water add to posole and pork. Simmer on low until posole begins to open up.. and is tender but does not fall apart. Approximately 1 hours.

This is a great crockpot food. Place all the ingredients in a crock pot for 4 hours on high.
