2 T olive oil
1 lb. ground beef
1 c chopped onion
1 clove garlic (2)
1 t salt (2)
1 8-oz pkg wide noodles
1/2 lb. sharp cheddar cheese, thinly sliced\1/2 lb. cottage cheese (sm curd)
1 c grated Parmesan cheese
1/4 t pepper
1/2 t oregano
2 cans (8-oz) tomato paste
1 c tomato juice
1/2 c hot water

Heat oil in heavy skillet; brown beef, onion, & garlic. Add salt, pepper, oregano, tomato paste, juice, & hot water. Cover and simmer 15 mins.
Cook noodles until tender. Grease 2-qt casserole with olive oil & place ingredient in it in this order, using only half and then repeating: noodles, cheddar and cottage cheeses, meat sauce, Parmesan cheese.
Bake 375 for 15 mins. (350 for 30 mins.) or until firm
