6 - 8 red skin potatoes, sliced thin
1 small vadalia or any sweet onion, sliced thin
¼ c. clarified butter
TT salt
TT pepper

Directions:
Directions:
Bring a dry iron skillet up to high heat for about 2 or 3 minutes. Add the clarified butter and then the onions to the pan and allow onions to begin to carmelize before adding the potatoes. Add the potatoes, salt and pepper, when start to cook and form a light brown crust, turn them so they can brown on both sides. Reduce the heat to about medium and cook for another 5-7 minutes.
