4 fresh Ahi Tuna steaks, about 1 inch thick
2 T. oil
2 T. mixed fresh ground pepper (red, black, white & green peppercorns)
1 or 2 limes cut into wedges
Mango Salsa:
2 ripe mangoes, peeled and medium diced
½ c. red onion, minced
2 T. jalapeño chilis, blanched, peeled and seeded
¼ c. fresh cilantro, chopped
2 T. fresh lime juice

In a non-metal bowl, combine all of the salsa ingredients and mix well. Let the salsa set to blend the flavors for about 30 - 45 minutes, stirring occasionally.

Preheat the grill, if gas, for about 15 - 20 minutes, with all burners on high.

Rinse the tuna steaks with cold water and blot them dry. Put them in a shallow dish and coat them good on both side with your oil of choice, I use a light olive oil. Grind pepper on each side of the tuna, pressing the pepper into the flesh. Lightly salt each side.

When the grill is hot and grates have been cleaned and oiled, place the tuna steaks directly over the heat for 2-3 minutes, turn them over and sear for 2-3 minutes on that side. Internally the fish will be "rare" at this point, if you want to cook it longer, then reduce the heat to medium-high and an cook to desired doneness.

Serve the fish with the salsa and limes on the side.
