For dough:
300 g unsalted margarine or butter
30 g yeast
1 tbsp sugar
4 cups (0.5 kg) flour
3 yolks
For filling:
200 g chopped pecans or walnuts
peel from one lemon
150 g sugar (~3/4 cup)
6 tbsp jam (cherry, blackberry, rasberry, strawberry or apricot)
Topping:
2 tbsp confectionary sugar
100 g dark chocolate
50 g butter

Directions:
Preheat oven to 190 °C or 375°F. Bake between 40 and 45 minutes until golden brown.

Dough:
Dissolve the yeast in 1/2 cup warm water (~40°C) together with one tbsp sugar. Let stand for 10 minutes. In a separate bowl mix egg yolks and margarine and then add the flour. Mix well. Pour the yeast solution on the dough. Knead well until obtaining a nice dough. Divide into 3 equal parts.

Filling:
Beat white eggs with sugar being added gradually until hard. Add the chopped nuts gently with a wooden spoon.
Divide into 2 halves. The gem needs to be extremely smooth beforte spreading.
Flatten a third of the dough. Coat with margarine or butter the bottom of a 13x9 inch (20X30cm) oven tray and place the first third of the dough on it. Spread the jam on the dough. Spread evenly half of the filling. Add the second third of the dough. Repeat the spreading of the jam and the rest of the filling. Add the rest of the dough. Make several perforations with a fork and bake 40 or 45 minutes at 190°C or 375°F. Let stand to cool.

Topping:
Dissolve chocolate and sugar above boiling water. When soft, add the butter. Pour evenly over the cooled baked cake and let cool.

Store in the refrigerator.
