5 ears of corn (preferably, sweet white corn)
1/2 c, finely diced red onion (1 small red onion)
3 tbsp. olive oil
1/2 tsp. kosher salt
1/2 tsp. pepper
1/2 c. chiffonade of fresh basil

Directions:
Directions:
Cook 5 ears of corn for 3 minutes, immerse in cold water, and cut off kernels. Toss kernels together with red onion, olive oil, kosher salt, pepper and fresh basil. Serve cold or at room temperature.
