1/2 cup evaporated milk
1 Tbsp instant coffee granules
12 Tbsp butter
1/4 cup sour cream
1 tsp vanilla
1/4 tsp salt
3/4 cup brown sugar
3 oz semi sweet chocolate
1/2 cup unsweetened cocoa
2 egg yolks
5 egg whites
2 cups whipped topping
2 cups sliced fresh strawberries

Preheat oven to 350º. Spray 9" spring form pan. Line with parchment paper. In small sauce pan whisk milk, brown sugar and coffee and cook over medium heat until mixture is almost boiling and sugar is dissolved. Remove form heat. Add chocolate and butter. Stir until melted. Transfer to a mixing bowl and let cool for 5 minutes. It will still be warm. Add cocoa, sour cream, egg yolks and vanilla to chocolate and beat on medium speed until smooth. Set aside. Thoroughly clean and dry beaters. Place egg whites in a deep glass metal mixing bowl and add salt. Beat on high until stiff peaks form. Fold egg whites into chocolate mixture in additions until no white streaks remain. do by hand with spatula. Pour mixture into prepared pan. Bake for 30 to 35 minutes or until cake has risen and top feels dry to touch. Remove cake from oven and cool. It may fall. Cover and refrigerate until cold (3 hours). Garnish with whipped cream and strawberries. Enjoy!
