8-10 small red potatoes
olive oil
2 T. Herbs de Provence

Preparation Time: 15 minutes

Cut potatoes in half. Pour a few T of olive oil (extra virgin is best) in baking dish or on cookie sheet. Sprinkle 2 T of Herbs de Provence in the oil. If desired, add pinch of salt to mixture. Dredge potatoes in oil and herbs and bake at 350º,
cut side down, until potatoes are cooked and slightly browned, about 45 minutes.
