Beat 3 eggs until thick and lemon colored. Add 1 c. sugar, beat again. Add 1 t. lemon juice and 2/3 c. pumpkin. Beat. Mix following ingredients together and add to above mixture:
3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1/2 t. salt

Filling:
8 oz. cream cheese
1/2 t. vanilla
4 t. butter
1 c. powdered sugar

Cake:
Spread batter into a greased and floured jelly roll pan. Sprinkle top with 1/2 c. chopped walnuts. Bake at 375º for 15 minutes. Remove from pan immediately (may have to pry sides with spatula) onto a dish towel sprinkled with powdered sugar and roll up (dish towel included). Refrigerate to cool.

Filling:
Cream until smooth.

Unroll pumpkin roll. Spread on filling. Roll up again (minus dish towel). Cut and serve.
