2 T pesto (homemade or store bought)
2 10" flour tortillas
4 oz. cream goat cheese
1 jar (11 oz) roasted red peppers, drained

Serves: 8-10
Preparation Time: 30 Minutes

Spread pesto along edge of one side of each tortilla to resemble sliver of moon. Spread goat cheese over remaining tortilla. Starting beside pesto, cover center of each with red peppers, leaving 2" border of cheese uncovered at edge opposite pesto. Starting at pesto side, roll up. Wrap each in plastic wrap; refrigerate for 1 hour or for up to 24 hours. Cut each roll diagonally into 12 slices. Makes 24 pieces.
