3 slices bacon, diced
1 lb. boned chicken breast, cubed
¾ c. finely chopped onion
¾ c. finely chopped celery
4 c. chicken broth
1 can whole kernel corn, drained
1 can cream style corn
2 c. diced potatoes
½ tsp. salt
1 c. half and half
2 T. chopped parsley

In pot, cook bacon until crisp. Remove bacon. Pour off all but 2 T. drippings. Add chicken, onion, and celery. Cook for 10 minutes. Add corn, broth, potatoes, and salt. Bring to a boil over high heat. Reduce to low and simmer, partially covered, for 20 minutes or until potatoes are tender. Stir in cream and parsley. Simmer 2 to 3 minutes. Stir in bacon.
