2 envelopes gelatin
1 cup cold orange juice
¼ cup sugar
½ tsp. salt
4 Tbsp. lemon juice (approx juice of 2 lemons)
14 oz. can pineapple chunks and juice
10 oz. can mandarin oranges (drained)
1 cup carrots (coarsely grated)
½ cup celery sliced fairly thin

Directions:

Sprinkle gelatin over cold orange juice in a sauce pan. Place over low heat, stir constantly until dissolved (approx. 4 minutes).

Remove from heat, stir in sugar, salt and lemon juice.

Drain pineapple chunks, reserving juice. Stir juice into gelatin mixture.

Chill mixture until consistency of unbeaten egg white.

Dice pineapple chunks, stir into chilled mixture along with drained mandarin orange sections, carrots and celery.

Turn into 6 cup bowl or mold. Chill.
