3/4 lb. shallots
1 1/2 T. olive oil
3 c. beef broth
3/4 c. Tawny Port
3 slices bacon, chopped
1 T. tomato paste
3 T. butter
1/2 c. flour

Directions:
Directions:
Peel and thinly slice shallots. Place in ovenproof pan with olive oil and bake @ 350 F for about 30 min., stirring occasionally, until shallots are deep golden brown. In the meantime, boil broth and port until reduced by half. Saute bacon in another pan until crisp. Drain on paper towels. When broth and port are reduced, add tomato paste and shallots. Mix butter into flour and add to sauce. Heat until thickened.
