1 lb Hot pork sausage
1 - 2 lb. mushrooms, cleaned and sliced
1 medium onion, diced
6 eggs, beaten
3 T. sour cream
5 oz. Mexican Hot Salsa
8 oz. grated Mozzarella cheese
8 oz. grated mild cheddar cheese
8 oz. grated American cheese (hint: put in freezer for a hour, it will be easier to grate)
TT salt
TT pepper

Directions:
Directions:
Sauté sausage, mushrooms and onions. Add salt and pepper. Drain fat and set meat mixture aside. In a blender, mix eggs and sour cream for about 1 minute. Butter the sides and bottom of a 9" X 13" casserole. Add eggs and place in a 400ºF oven until the eggs are set (about 6 - 8 minutes). Remove from oven and spoon on the salsa and sausage mixture. Top with a blend of the cheeses. Place under the broiler until the cheese melts and browns.

This can be assemble the night before and popped into a 300ºF oven for about 45 minutes or until the cheese starts to melt and the cheese browns.

I have made this many times over the years and it is fantastic for a brunch. It is spicy so beware.
