3 c. Yellow Summer Squash, grated
1/4 c. Sour Cream
1 T. Butter
1 c. Sharp Cheddar Cheese, grated
1/2 tsp. Salt
1/4 tsp. Paprika
2 Eggs, beaten
1/4 c. Onion, minced
1/2 c. Carrots, grated
1 c. Fresh Bread Crumbs

Directions:
Directions:
Heat oven to 375º.
Blanch squash for 3 minutes, drain well.
Combine sour cream, butter, 1/2 cup cheddar cheese, salt and paprika in a sauce pan over low heat to melt the cheese. Stir in eggs, onion and carrots. Add squash.
Place squash mix into sprayed 9x9 baking dish. Cover with bread crumbs and remaining 1/2 cup cheddar cheese. Dot with butter and bake for 20-25 minutes.
