Very thick, meaty, rack of lamb
¾ cup Panko (Japanese bread crumbs) per rack
Tarragon
Thyme
Parsley
Mint
Rosemary
Grey Poupon
Olive oil

Directions:
Directions:
Using a frying pan, sear the lamb on both sides, very quickly, in olive oil.



Use ½ - 1 cup panko, 1 teaspoon of tarragon, thyme, parsley, mint and rosemary and mix them together in the blender. Coat the meat side of the rack with grey poupon mustard. Pat the seasoning mixture on top of the mustard. Bake in the preheated oven for 20 minutes at 375 degrees. Let sit for 5 minutes then serve.
