6-8 slices French bread
2 cloves garlic, halved
2 Tbsp minced onion
1 large tomato, diced
pinch dried oregano (or fresh)
pinch freshly ground pepper
2 tsp freshly grated Parmesan cheese (optional)

Directions:
Directions:
Under broiler, toast bread on both sides until brown. Rub one side with garlic. Heat oil in nonstick skillet; add onion, stirring until tender. Add tomato, oregano, and pepper. Stir to mix. Spoon mixture on garlic side of toast. Serve immediately. (Or sprinkle on Parmesan and broil for approximately 1 minute.)
