1 lb fresh or frozen okra
2 T oil
2 med. Onions, chopped
4 med. Tomatoes, peeled and cut into small pieces or 1 large can diced tomatoes
1 tsp. salt
1 T lemon juice
Parmesan Cheese (optional)

Directions:
Directions:
Peel off crown of okra and cut off bottom
Wash and drain (frozen is already cut and cleaned)
Put all ingredients an a saucepan and simmer 5-10 minutes
Place in a shallow baking dish and sprinkle cheese if desired
Bake ½-3/4 hour at 400 until nicely browned on the top
