1 1/2 lemon grass, chopped
1 teaspoon thyme
1/4 teaspoon salt and pepper
1 garlic clove, minced
1 1/2 teaspoon olive oil
12 medium shrimp
4 teaspoons Serrano Chile
1/3 cup Canadian bacon
1/4 teaspoon nutmeg
1 1/2 cups green onion
8 ounces spinach
2 teaspoon balsamic vinegar
1 teaspoon cornstarch
1 tablespoon parsley

Directions:
Directions:
Combine the first 5 ingredients and then heat one tablespoon of oil in a skillet. Cook shrimp and lemon grass mixture and Chile, cooking one minute. Remove and then cook bacon, onions, nutmeg. Stir in spinach, cover, and cook. Drain spinach and reserve liquid, cornstarch, and cook, adding shrimp to coat and then serve over spinach mixture.
