1 tbsp. olive oil
2 c. chopped onion
3 garlic cloves, minced
4 cups water, divided
2 tbsp. sugar
2 tbsp. chili powder
2 tbsp. Worcestershire
2 - 14.5 oz. cans diced tomatoes, undrained
1 - 15 oz. can garbanzo beans, rinsed and drained
1 - 15 oz. can black beans, rinsed and drained
1 - 15 oz. can kidney beans, rinsed and drained
1 - 15 oz. can cannellini beans, rinsed and drained
1 - 6 oz. can tomato paste
1/2 c. shredded cheese

Saute onion and garlic in oil (3 minutes). Add 3 cups water and next 8 ingredients (through beans) stirring to combine. Combine remaining cup of water and tomato paste in a bowl, stirring until blended. Stir paste mixture into bean mixture. Bring to a boil, reduce heat and simmer 5 minutes. Ladle chili into bowls, top with cheese.

This originally appeared in Cooking Light magazine. It's a vegetarian dish but I sometimes like to add 1/2 pound of crumbled cooked ground turkey.
