4 cups cubed potatoes, unpeeled
1 quart boiling water
1 teaspoon salt
1/8 teaspoon cayenne pepper
4 tablespoon chopped cilantro
2 tablespoons dill
1 medium tomato
2 tablespoons cooking oil
2 cloves garlic
1 large sweet onion, chopped
1/2 cup sour cream
1/2 cup tomato salsa, fresh

Directions:
Directions:
Boil potatoes until tender, and then combine next 5 ingredients. Heat oil and add garlic, onion, and stir occasionally. Add potato mixture and cook 10 minutes more in hot pan. Sprinkle with cheddar cheese and serve with sour cream and salsa.
