1 tsp oil
2 c chopped red peppers (about 1 large)
1 c chopped onions (about 1 medium)
1/4 c barbecue sauce
1 tsp ground ginger
1 tsp garlic powder
1 pineapple cut up into chunks (juicing 1/4 of it to add later)
12 oz frozen cooked meatballs
2 c cooked rice

Directions:

1. Heat oil in large skillet on medium high heat. Add peppers and onions: cook 5 min or until tender, stirring frequently.
2. Stir in barbecue sauce, ginger, garlic powder, and reserved pineapple juice. Add meatballs: mix lightly until evenly coated. Cook 10 min. or until meatballs are heated through, stirring occasionally. Add pineapple: mix well.
3. Serve over hot rice.
