15 oz can chickpeas
3 cups chicken broth
3 tbsp natural peanut butter
2 onions, chopped
1" piece of ginger root, peeled
14 oz can diced tomatoes
1 tsp peanut oil
1 1/2 tsp curry powder
1/2 tsp cumin
1/4 tsp cayenne pepper, to taste
chopped cilantro

In blender, combine chickpeas, 1/2 cup of the chicken broth and the peanut butter, puree. In lrg saucepan, heat peanut oil, saute the onions and ginger root until soft. Stir in curry and cumin, saute 1 minute. Add remaining broth, tomatoes and chickpea mixture, simmer 5 mins. Season with cayenne, serve sprinkled with cilantro.
