1 1/2 cup boiling water
1 cup dried apricots
1 cup sugar
1 T. shortening
1 egg, beaten
2 1/4 cup sifted flour
1/4 tsp. baking powder
1/2 tsp. salt
2 tsp. soda
1/2 cup chopped nuts
1 tsp. vanilla

Directions:
Directions:
Pour boiling water over apricots. Let stand 10 minutes. Add sugar to beaten egg and mix. Sift dry ingredients together; stir in the chopped nuts. Add apricots and water mixture to dry ingredients. Stir in egg mixture. Add shortening and vanilla. Bake in loaf pan 1 hour at 350º.
