I lb extra lean ground turkey
1 onion
3 cloves garlic, minced
1 green pepper, chopped
1 red pepper, chopped
1 cup fresh mushrooms, sliced
1- 3/4 cup chicken broth
1 19 oz can beans
1 cup salsa
1 cup frozen corn
2 tbls chili powder
1 tsp cumin
1 tsp oregano

Directions:
Directions:
Brown turkey meat in a large pot, breaking it up well. Drain and rinse black beans well, keep aside. Add onion, garlic, peppers, mushroom and saute for a couple minutes more. Add spices (chili powder, cumin, oregano), broth, salsa and black beans and corn, bring to a boil. Then lower heat and simmer for 10 minutes or so.

**All measurements are guesstimates, and veggies can be substituted with other veggies. You could also substitute the ground turkey with some Veggie ground round.
