1/4 cup milk
2 egg whites (or 1 whole egg)
1/4 cup Parmesan cheese
1/2 tsp crushed garlic
1/2 tsp oregano
1/2 tsp basil
1 tsp onion flakes
1 tsp salt
1/4 tsp cayenne pepper
1/2 cup wheat bran
500g ground beef, chicken or turkey
1 slice of bread, crust removed and bread torn into small pieces

Preheat oven to 375º. Soak the bread in the milk in a small dish. Line a cookie sheet with foil. Spray the foil. In a large bowl, whisk the eggs. Stir in Parmesan, garlic, oregano, basil, onion flakes, salt and cayenne. Crumble in the meat. Add the bran. Mash the bread and stir it into the meat mixture Don't overwork it. Roll into 2" meatballs (makes 18-20) and bake for 30-40 minutes. This is the best recipe we've found for meatballs. We also make it into burgers.
